Pizza Night
Its Pizza Night here at the Country Cottage. Our Great Grandchildren Brinden and Kyleigh have been here for a summer visit. One thing that we have always enjoyed as a family is Pizza Night. Everyone gets to help make the Pizza, its a lot of fun and it is soooo good!
Kyleigh (nickname Miss Texas) made a Pepperoni and Cheese Pizza.
Brinden made a Hamburger, Red and Green Bell Pepper, Onion and Purple Basil Pizza.
They both helped out with the Basil Pesto and Cheese Pizza.
We made our Pizza Sauce and Basil Pesto early in the day so all the seasons could set.
Pizza Sauce
24 ounces of homemade tomato sauce
2 teaspoons fresh oregano, minced fine
1 tablespoon fresh basil, fine chop
pinch of salt
pinch of red pepper flakes
Mix all the ingredients together and simmer for at least one hour.

Basil Pesto
From: "Miz Helen's Kitchen Table" cookbook
3 cups fresh Basil leaves
3 Tablespoons grated Parmigiano-Reggiano Cheese
2 Tablespoons pine nuts or walnuts (chopped)
2 large garlic cloves, minced
1 cup olive oil
Pulse Basil leaves, cheese, pine nuts or walnuts, and garlic in a food processor. With the machine running pour in olive oil in a thin, steady stream until the mixture is well combined and emulsified.
Keeps in the refrigerator for about a week or will freeze for 3 months.

Pizza Dough
From: "Miz Helen's Kitchen Table" cookbook
1 package active dry yeast
1 cup warm water
1/2 teaspoon salt
2 teaspoon olive oil
2 1/2 to 3 1/2 cups flour
1/4 cup cornmeal
Dissolve yeast in warm water in warmed bowl.
Add salt, olive oil and flour.
Mix with dough hook in mixer 3 minutes. Place in greased bowl turninggrease top and cover. Let rise 1 hour. Punch down.
Brush pan with oil cover with cornmeal. Press dough down on the Pizza Stone or Pizza Pan. Top with your favorite pizza toppings.
Bake 450 for 12 to 20 minutes
Makes 1 14 inch pizza

Miz Laurie just follow the recipe. It is a really great recipe and very easy. Pizza dough is a good dough to start out with. It is a lot of fun to just play with. The kids will love it. Let me know how it turns out.
