Whats For Dinner Next Week:Green Chili Pulled Pork Burrito's
Come on in, we are just on our way to the Up Stairs Patio. It really is a beautiful place to have morning coffee. The birds are so busy at the bird feeders, and I just love to watch them take a bath in the bird bath.
We love being outdoors this time of the year. I am planning a Fall Picnic for a group of friends from the City. We will have about thirty friends so we will be doing some serious cooking. I have been planning The Fall Picnic for some time, so I already have some items stocked in my freezer and pantry.When I have an upcoming event I am always watching for specials. Another event I plan around this time of the year is football. We love it all, High School, College, and Professional. Sunday is usually the big game day and sometimes we will have friends over to watch the game, so I like to serve food that is easy to prepare and not to much last minute preparation.

Slow Cooker Green Chile Pulled Pork Burritos
The Rub
Prepare the Vegetables
Pull the Pork
Fill the Burrito
Enjoy!
2 1/2 lb. Boneless Pork Loin Roast
Mix the following ingredients for a rub
2 tsp Kosher Salt
2 tsp fresh ground pepper
2 tsp fresh ground pepper
2 tsp Cumin
1 tsp Cayenne Pepper
2 cups chopped Green Chile's
2 cups peeled, chopped tomatoes with juice
12 small red new potatoes with skin on chopped in quarters
2 cloves garlic minced
3 cups water
1 Tbs Extra Virgin Olive Oil
Wash the Roast and pat it dry cover the Roast with the rub.
Sear the Roast in 1 Tbs Extra Virgin Olive Oil in a very hot skillet
Place the Roast in the warm Slow Cooker pan. Place the potatoes around the roast
Add the Green Chile's, Garlic, Chopped Tomatoes with Juice and the water.
Cook on high for 4 hours or on low for 6 to 8 hours
Take the Roast out and let it stand for 5 minutes,then pull the meat apart with forks
Warm Flour Tortillas, fill with the Pulled Pork, Potato, Green Chile and Tomato

1 small bag dried Pinto Beans and a small amount of ham or bacon to season; cooked according to package directions.
After they are cooked and while still hot add:
3 tablespoons Chili powder
1 1/2 tablespoon Cumin powder
2 teaspoons Garlic powder
Salt and Pepper to taste
Simmer for 20 to 30 minutes to allow season to set. Enjoy!
