Raspberry Sheet Cake
Our local Farmers Market has the most beautiful Raspberries right now and I could not resist making a special dessert just for these beautiful berries. Not only does it give some beautiful color and flavor it offers a little glimmer of hope that spring is just around the corner. I already have a very special dinner planned for "Honey Bunny", but we can always use an extra dessert, and who knows maybe you will drop by and surprise us, I sure hope so!
Raspberry Sheet Cake
Miz Helen's Kitchen
Ingredients
2 cups all- purpose flour
2 cups white sugar
1 teaspoon baking soda
1 teaspoon salt
2 eggs, beaten
1/2 cup sour cream
2 teaspoons Raspberry Extract
1 cup butter
1 cup water
2 cups fresh Raspberries
2 cups fresh Raspberries
Directions
In a medium mixing bowl mix together the eggs and sour cream until smooth
In a large mixing bowl mix together, flour, sugar, baking soda, and salt.
Add the egg and sour cream mixture and beat the mixture into the flour mixture
In a small saucepan add the butter and water and bring to a boil
Add the hot butter and water to the flour and egg mixture and whisk until smooth
Add the Raspberry Extract and mix well until comply blended
Stir in the Raspberries breaking some of them so you have little bits all over the cake

The batter will be very thin
Pour into a greased and floured 15X10 by 1inch baking sheet
Bake at 375 degrees for 20 minutes
Let cool before frosting
