Fall Garden Hash
When we transition the garden from spring and summer vegetables to the fall vegetables it is a wonderful time of cooler weather and wonderful root vegetables with great color and flavor. This recipe brings together some of the falls best from the garden combined with great seasons producing a fabulous side dish. We just love this dish and sure hope you and your family enjoy it.

Ingredients
4 thick bacon slices
2 tablespoons butter
1 medium onion, chopped
1 medium sweet potato, peeled and cut into 1/2 inch cubes
2 medium size turnips, peeled and cut into 1/2 inch cubes
1 pound of small fresh Brussels Sprouts, quatered
2 garlic cloves, sliced
2 tablespoon white wine vinegar
1/4 cup water
1 teaspoon salt
1 teaspoon pepper
1 teaspoon thyme
Directions
In a large skillet over medium heat cook the bacon until crisp, remove bacon and drain
Drain the bacon grease from the skillet reserving 2 tablespoons in the skillet
Add 2 tablespoons butter and melt the butter
Add the onions,potatoes and turnips then cook over medium until tender, stirring to keep from sticking
Add the vinegar and water mix well
Add the Brussels Sprouts and garlic, mix well and cook until Brussels Sprouts are sauteed and soft stirring often, finally add the salt, pepper and thyme, mix well
Chop the crisp bacon and add it to the dish
Serve warm or at room temperature
It is even better the next day!

I envy you your gardening expertise, but only in the best sense. I do not have the space, but for a few pots of herbs. Thank goodness for the farmers markets. This is truly a Fall garden in a pot. Yummy.
