Southwest Chicken Soup
Sometimes we just love a bowl of hot spicy soup for lunch or dinner. Just add a salad or a fresh bread and you have a great meal, well with a little dessert of course. This soup is full of southwest flavor and packed with great vegetables and chicken, and sometimes better the day after. We are making Southwest Chicken Soup today and sure hope you enjoy it as much as we do.

Miz Helen's Kitchen
Ingredients
3 cups cooked chicken, chopped
2 tablespoon butter
1 yellow onion, chopped
2 cloves garlic, chopped
1 jalapeno, seeded and chopped
1 cup green chilies chopped
2 cups whole kernel corn
3 cups chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon dried cilantro
1 teaspoon salt
1 teaspoon pepper
1 10 ounce can Rol Tel, original
1 cup half and half
1-1/4 cup Cheddar Cheese, grated
Directions
In a heavy stew pot add the butter, onion, garlic, green chilies,and corn, cook until the onion is clear
Add the chicken, Rol Tel and all the seasons, mix well and simmer together for 3 minutes
Add the broth, half and half, jalapeno, and1 cup of cheese, mix well
Cook on low heat stirring until the cheese is melted, then cook on low for 30 minutes until all the ingredients have blended and are hot. If your soup is to thick just add more broth or water.
Garnish with 1/4 cup Cheddar Cheese and Baked Corn Tortilla Strips
