Seafood Casserole
I have been making this Seafood Casserole for years, it is a fabulous casserole to take to a covered dish function, or it makes a great family meal. This is a delicious tasting casserole with wonderful crab and shrimp, although it can be made with lobster if you want to really make it special. My friend was coming to have lunch with me the other day and requested the Seafood Casserole so I decided to share it with all of you as well.
Seafood Casserole
Miz Helen's Kitchen
Ingredients
2 1/2 cups crab-meat, chopped
3 cups shrimp, shelled, cleaned and chopped
1 green bell pepper, chopped
1 yellow onion, chopped
1 cup celery, chopped fine
1 tablespoon Worcestershire Sauce
1 cup Mayonnaise
1 cup sour cream
1/2 teaspoon salt
1 teaspoon pepper
1 tablespoon parsley
dash cayenne pepper, to taste
3/4 cup raw rice, cooked and drained
1 cup Panko Crumbs
Directions
Cook rice according to package directions and set aside
In a small bowl, mix the Worcestershire Sauce, Mayonnaise, Sour Cream, salt, pepper, parsley and cayenne, mix well until blended
In a large mixing bowl add the crab-meat, shrimp, bell pepper, onion,celery and rice mix well
Add the Worcestershire and Mayo mix, and stir until all the ingredients are blended well
Spray a 9X13 baking dish with cooking oil spray
Pour the casserole into the sprayed dish
Cover the top with the Panko Crumbs
Bake at 350 degrees for 30 minutes
Cool for 10 minutes before serving

ReplyDeleteMy mother used to make something similar and it was one of my favorite Friday night dinners. I know I won't be able to stop thinking about this dish until I make it. It looks like I can easily cut the recipe in half.
