The Picnic Cake
When we are planning desserts for a picnic with family or friends, someone always ask who is bringing The Picnic Cake. The Picnic Cake has been around since I can remember, ( that is a very long time). We all love making this cake because it is so versatile, it can go in the back of the boat for a day long fishing trip or it can sit on a nice dessert table for a patriotic celebration. This cake can be anything you want it to be, its just one of those great classics that our family and friends love.

Miz Helen's Kitchen
Ingredients
2 cups all- purpose flour
2 cups white sugar
1 teaspoon baking soda
1 teaspoon salt
2 eggs, beaten
1/2 cup sour cream
1 teaspoon Vanilla Extract
1 cup butter
1 cup water
Directions
In a medium mixing bowl mix together the eggs and sour cream until smooth
In a large mixing bowl mix together, flour, sugar, baking soda, and salt.
Add the egg and sour cream mixture and beat the mixture into the flour mixture
In a small saucepan add the butter and water and bring to a boil
Add the hot butter and water to the flour and egg mixture and whisk until smooth
Add the Vanilla Extract and mix well until comply blended
The batter will be very thin
Pour into a greased and floured 15X10 by 1inch baking sheet
Bake at 375 degrees for 20 minutes
Let cool before frosting
Frosting
Ingredients
1 8 ounce block cream cheese, at room temperature
1/2 cup butter, at room temperature
1/2 cup shortening
1 teaspoon Vanilla Extract
4 to 6 cups powdered sugar
Directions
In a medium size bowl, cream the cream cheese, butter, shortening until smooth.
Add the Vanilla extract
Slowly add the powdered sugar until you get the consistency needed for the frosting
Garnish with your choice of fruit and don't forget the ice cream, enjoy!

I made this cake today for the 4th of July, it looked so pretty. When it came time to eat it I have to say it was awful, we just threw out the whole cake but we took the berries off first. The icing was okay but the cake was literally chewy, my sister and I threw the whole cake out then when I cam home from her house I ripped the recipe out of my recipe folder. The top of the cake browned nicely and I cake tested the cake with a cake tester also a toothpick and it definitely passed the test as being done, it only rose a little bit, kind of looked like and over-sized pancake.
