Cherry Cake with Cherry Frosting
This Cherry Cake has been showing up at ladies luncheons, covered dish events, special dinners and sometimes just a fun cake to make for a special holiday. I was recently asked to prepare this cake for a wedding shower and have even made it for a couple of baby showers. This cake is light and fluffy with a very delicate taste of cherry and almond, the fabulous frosting is a dessert all by it's self. I like to prepare surprise treats on special days for my family and this is a cake that they really enjoy.

Cherry Cake with Cherry Frosting

Ingredients
For The Cake
2 1/2 cups cake flour, sifted
1 1/2 cups sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup shortening,(vegetable shortening)
3/4 cup milk
1 teaspoon vanilla
2 teaspoons almond extract
1/4 cup Maraschino Cherry Juice
4 egg whites unbeaten
18 Maraschino Cherries, drained and finely chopped
Maraschino Cherries for garnish if desired
Directions
For The Cake
Sift together the flour, sugar, baking powder and salt into a large mixing bowl.
Add the shortening to the dry mix and beat on slow to blend about 1 minute.
Mix the milk, vanilla, almond extract and cherry juice.
Add 3/4 of the milk mixture (reserve 1/4 of the liquid) to the dry ingredients and mix on low for 2 minutes.
Add 4 egg whites to the reserved liquid mixture of milk and flavors then add that mixture to the cake batter and mix on low for 2 minutes.
Stir in the chopped cherries.
Pour into greased and floured two 9 inch cake tin's and bake at 350 degrees for 25 to 30 minutes until just browned on top and done in the center.
Let cool before frosting.
Cherry Frosting

Ingredients For The Frosting
1 8 ounce block cream cheese, at room temperature
1/2 cup butter, at room temperature
1/2 cup shortening
1 teaspoon almond extract
1/4 cup Maraschino Cherry Juice
4 to 6 cups powdered sugar
Directions
In a medium size bowl, cream the cream cheese, butter, shortening until smooth.
Add the extract and the cherry juice and mix until completely blended.
Slowly add in the sugar until you have reached the consistency needed for your frosting.
Garnish with Maraschino Cherries
Mix The Batter and Stir In The Cherries
While The Cake Is Cooling Make The Frosting
Frost The Cake and Garnish With Cherries
Slice and Serve

It really warms my heart when our adult children are together and they talk about the special touches that we had at meal time when they were growing up and now they are passing that on to their children.

ReplyDeleteMy favorite cake as a kid and what I always requested for birthdays was cherry cake. My mom made it from a mix but this looks so much better! I even had cherry cake for my wedding. :)

Hello, I'm not sure you'll get this but I'm looking for a cherry cake and this looks delicious. I'm looking for a smaller cake however. Is there anyway this recipe can be altered for a 3 layer 6" cake? Thanks so much!

DeleteI did get the question and I really can't give you a good answer as I haven't tried to make this recipe another way. However the recipe is for 2-9inch pans, so that would be 18 inches, if you divided the batter into 3 equal parts it would still be 18 inches, so in theory it should work.
