Ham and Asparagus Roll Up with Apricot Sauce
A Great Appetizer
The asparagus in the garden this time of the year is just beautiful, fresh and crisp. Sometimes I just have to eat a spear of asparagus as soon as it is cut in the garden. I am expecting a crowd here at The Cottage this week end so I wanted to create a nice appetizer with my fresh asparagus. This recipe is very simple and flavorful, you could make it for 2 or 20 and it would be great!
Ham and Cheese
Wrapped In a Lovely Crescent Roll
Serve Hot or At Room Temperature
Serve With Apricot Sauce On The Side
Ham and Asparagus Roll Up

8 Fresh Asparagus Spears
1 cup baked ham, chopped fine
1 cup mozzarella cheese, grated
8 Refrigerated Crescent Dinner Rolls
Directions
In a food processor chop 1 cup of baked ham.
Grate 1 cup mozzarella cheese.
Unroll the Crescent Dinner Rolls and separate
Place one tablespoon of ham, one tablespoon of cheese and 1 fresh asparagus spear, then roll into the dinner roll.
Place on a baking sheet and bake at 375 degrees for 12 minutes.

2 cups Apricot Jam
2 Tablespoons Harvest Course Ground Grey Poupon
1 Tablespoon Cider Vinegar
1/2 teaspoon ginger
1/4 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
Option: 1 Jalapeno Pepper diced fine
Mix all the ingredients in a small sauce pan and heat over medium heat until hot, do not boil.
Enjoy!
