Texas Peach Salsa
We are so fortunate to live a short driving distance to some of the best peaches in Texas. We get so excited when the peaches are ready, the season is not that long so we have to enjoy every day of the season. One of the dishes that we love is our Texas Peach Salsa, a salsa that can be used as a dip, as a side dish for any meal or as a garnish for a very special grilled meat or vegetable. Our Granddaughter Stephanie has been here for Grandma's Summer Camp and this salsa was one of our project dishes that she was able to help us with. We love this salsa and sure hope you enjoy it!

Texas Peach Salsa
Miz Helen's Kitchen
4 to 6 cups grilled chopped peaches, skin on
1/2 cup red onion, chopped
1 teaspoon cumin
1 teaspoon coriander
1/4 teaspoon cayenne pepper
1 teaspoon salt
1/2 cup lime juice
1/2 cup honey
Zest of 1 lime
1 lime sliced thin
1 cup fresh cilantro, chopped
Directions
Wash and dry the peaches. Cut them in half and remove the seed.
Grill the peaches on a hot grill face side down for about 3 to 5 minutes.
As soon as the peaches cool to room temperature, chop the peaches in small bite size pieces.
In a mixing bowl add the grilled chopped peaches, chopped red onion, cumin, coriander,cayenne pepper, and salt.
Mix the honey and lime juice and lime zest together until completely blended.
Pour the honey and lime mix over the salsa and mix well.
Add the fresh chopped cilantro and sliced lime, mix well.
Refrigerate for at least 1 hour before serving.
