Cornbread and Apple Dressing
One of our family favorites is Chicken and Dressing. When we are talking about dressing here in the south it is cornbread dressing and that is the base of this recipe. Every now and then we like to kick it up just a little and this dressing is filled with apples, giving it a fantastic flavor.We love to make this when the apples are fresh, you really can smell this dressing cooking when you come in the door. My son always says, "oh boy Mom is cooking dressing."

Cornbread and Apple Dressing

Ingredients
1 skillet of cornbread (Corn Bread), very dry
8 slices of very dry 2 day old bread, chopped in cubes
2 cups celery, chopped
1 yellow onion, chopped
4 cups (about 5 Apples) Gala Apples, cored, chopped, peel on
1 cup butter
2 eggs, beaten
2 tablespoon poultry seasoning
1-1/2 tablespoons sge
1 tablespoon thyme
3 tablespoons parsley
salt and pepper to tast
4 cups turkey or chicken broth
1 cup whole milk
Directions
Make sure that your cornbread and bread are both very dry.
I usually let my bread's dry for 2 days on a cookie sheet.
In a very large mixing bowl, crumble the cornbread and bread into the bowl.
To the bread mix add the poultry seasoning, sage, thyme and parsley. Mix well.
In a very hot skillet melt 1/2 cup butter and saute the celery and onion. When the onion and celery are soft then add to the bread mixture and stir well.
Add the broth and milk to the mix and stir well.
Taste the dressing at this time and adjust the seasons.
Add the apples and mix well.
Add the beaten eggs and stir well, then add the remainder of the butter, reserving a little to butter the baking dish.
Butter your baking dish and then pour in the dressing.
Bake in the oven at 350 degrees for 45 minutes to an hour.
