Oatmeal Toffee Crispy Cookies
Oatmeal, toffee and something crispy all rolled into one great cookie. This cookie recipe is one of my favorites because I love the toffee with the oatmeal and of course I like the crispy crunch of the bits in the cookie. These cookies will be a very special treat for Tea Time On Tuesday or for a special after school treat.
Miz Helen's Kitchen
Ingredients
1 1/2 cups butter, softened
1 cup white sugar
1 cup dark brown sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
dash of salt
1 teaspoon cinnamon
1 teaspoon all spice
2 cups oats, quick oats
2 cups Rice Krispy cereal
1 (8 ounce bag) English Toffee Bits
Directions
Mix the softened butter, white sugar, brown sugar, eggs, and vanilla until very smooth.
In a separate bowl stir together the flour, baking soda, baking powder, salt, cinnamon, all spice, oats, Rice Krispy Cereal, and Toffee Bits.
Add the dry ingredients 1 cup at a time, mixing in between to the wet ingredients.
Using a small scoop, roll the scoop of dough in you hands to form a round ball.
Then place the dough ball on the cookie sheet and gently press the top down.
Bake at 350 degrees for 10 to 12 minutes.
Remove from the oven and place the cookies on a cooling rack.
Enjoy!
