Slow Cooker Steak Soup
We used to go to a restaurant called the Iron Tender and my favorite thing on the menu was their Steak Soup. After we moved away from that city we really missed their awesome Steak Soup, so I developed my own recipe for Steak Soup which is very close to the one we loved so much. This soup just simmer's all day in the slow cooker giving all the flavors a chance to come together to make this amazing soup. Hope you enjoy this recipe as much as we do!

Slow Cooker Steak Soup

Ingredients
2-1/2 pounds thick cut round or chuck steak, cut in bite size pieces
4 tablespoons olive oil
1/4 cup flour
6 carrots, chopped fine
2 onions, chopped fine
2-1/2 pounds red potatoes, chopped medium
6 cloves garlic, minced
2 teaspoons salt
2 teaspoon pepper
1 teaspoon celery salt
2 teaspoons smoked paprika
4 cups Beef Broth
1/2 cup tomato Paste
6 tablespoon Worcestershire Sauce
1 teaspoon Tabasco
Fresh Parsley For Garnish

Directions
Cut the steak into bite size pieces.
With 1 teaspoon salt and pepper, season the meat well.
In a medium size bowl, toss the steak pieces in the flour.
In a hot skillet heat the olive oil, then brown the floured pieces of steak.
Transfer the browned steak into a 6 quart pre-heated slow cooker.
Add the chopped carrots, onions, potatoes and minced garlic.
Add the remaining salt and pepper, celery salt, and paprika. Stir well.
Add the beef broth, tomato paste, Worcestershire Sauce and Tabasco.
Cover the slow cooker and cook on high for 4 to 5 hours or on low for 8 hours.
This makes a wonderful thick and hearty soup.
Garnish with fresh parsley and a dollop of sour cream.

I have a chuck roast in the freezer that I could use instead of the steak, I'm thinking. I just need to get some red potatoes and I'll be set to make this awesome soup!

ReplyDeleteThis sounds amazing! We just got a 1/4 cow yesterday and some of the cuts were unfamiliar to me or too small for us to use a whole family meal. This will be a great way to use some of that meat. Pinned.
