Full Plate Thursday 6-30-11

We are so excited to have you join us today, welcome to Full Plate Thursday! Like many of you we are getting ready for the big 4th of July week end. We will have friends and family in and out all week end and of course we will all gather for the big fireworks display on the lake here. It is always so special to see the reflection of the fireworks dancing across the water with sound of America the Beautiful playing in the background. I can't wait to see what you have brought to share today, because my holiday begins with you! Baked Hush Puppies

A number of years ago in an effort to prepare and present a healthier menu to my family I developed these baked hush puppies. Part of a good southern menu is catfish, cole slaw, and hush puppies. These are not the same as deep fried Hush Puppies, but they are really good. We find them a great little grab and go snack in addition to a healthier Hush Puppy. I have had several request to publish my recipe so today we have Baked Hush Puppies.  Baked Hush Puppies Mix The Dry Ingredients With Fresh Green Onions Add The Wet Ingredients Bake Baked Hush Puppies Miz Helen's Kitchen 2 cups Corn Meal 1/2 cup flour 3 teaspoons baking powder 1/2 teaspoon salt 1/4 teaspoon cayenne pepper 1 Green Onion with the green top chopped 1 garlic clove, minced 2 eggs 1 cup milk Mix all the dry ingredients together with the onion and garlic. Add the milk and eggs and mix well. Drop by the tablespoon onto a well oiled baking sheet. Bake at 400 degrees for 15 to 20 m

I am so glad to see you this morning,we have been working in the garden and are ready to sit down for a cup of coffee and one of these wonderful muffins. This is such a wonderful time of the year with friends and family coming out to the country for a visit. One of the local garden clubs will be touring latter this week and I am planning a brunch for them. We have family and friends coming for the upcoming 4th so we will be dong a lot of cooking. Lets get started on this menu. The Garden Gate: Around The Garden

I just love taking a walk early in the morning or late in the afternoon and look at all the wonderful beauty of  The Garden. We began to develop our little acreage about four years ago and about 3 years ago we planted a row of Magnolia Trees along the fence line by the county road. Magnolia's Magnolia Blooms Magnolia Bloom In Full Bloom and Smells Wonderful Beautiful! The Roses are just beautiful right now and in full bloom. My Don Juan Climbers are all along the fence line and are just beautiful. They are heirloom roses so  they smell heavenly. Don Juan Climber I hope you enjoy our walk Around The Garden. Green Chili Burger

We just love to entertain in the spring and summer when we can be outside and enjoy grilling and cooking out. One of the things we enjoy is creating different burgers and sauces. We would like to invite you to join us for a Green Chili Burger with Hot Chili Sauce. Green Chili Burger With Hot Chili Sauce Green Chili Burger Miz Helen's Kitchen 1 pound ground beef (we are so fortunate to have a local grass fed beef in our freezer) 1 teaspoon salt 1 teaspoon pepper 1/4 teaspoon garlic powder 1/2 teaspoon onion powder 1/2 teaspoon chili powder dash cayenne pepper 1/2  cup chopped green chilies 1/2 cup shredded Long Horn Cheese Mix all the ingredients together. Do Not over mix as it will make the burger tough. Divide into the thickness that you like you burger. Grill on an indoor or outdoor grill. Sprinkle the shredded Long Horn Cheese on the burger right before it is ready to plate. Hot Chili Sauce Miz Helen's Kitchen 1/2 cup real Mayonnaise

I am so excited to see you today and welcome to Full Plate Thursday! We had a great party last week that lead right into a wonderful week end with family and friends. I sure hope that you had a great Fathers Day week end.  We had our annual Friends picnic last week end, it was so much fun and we had wonderful food. Canned Pickle Pot Pickles If you are a Pickle Pot Fan you are going to love this easy recipe for the Pickle Pot Pickles . I like to clean my Pickle Pot out about every three months and start over with fresh cucumbers and spices. However I am not about to throw away those great pickles, so one day I decided why not can them, just look how it turned out. We just love these pickles and so does everyone that I have given them to. I am very excited to share this new recipe with all of you today.

What a wonderful week end we had with our friends at our annual picnic. It is always so good to see everyone and get to eat so much wonderful food. Everyone brings a side dish and they are the best cooks in this part of the country! Well we need to get moving with this menu before it gets to hot for me to be outdoors on this patio. Miz Helen's Chicken Salad

Today I would like to  continue giving you some of my recipes that I make with the Roasted Chicken. Just about everyone has a favorite Chicken Salad. that always goes to the covered dish luncheons, the afternoon tea's, church socials and the old family stand by. This is my Chicken Salad recipe that has gone to all those places and the one that I reach for the most and is the most requested. Pickle Pot Time

We are going to the cucumber patch today and get some cucumbers to start a Pickle Pot. I like to start a new pickle pot every year. I cannot imagine not having a Pickle Pot in my refrigerator in the summertime. Everyone who comes here in the summer always heads for The Pickle Pot.  This was my Pickle Pot last year when I introduced The Pickle Pot to all of you.   The Pickle Pot Today we are preparing a Pickle Pot for several people and a new one for me, so lets get started. The hardest part of the Pickle Pot is waiting for them to be ready. We Start With A Bed Of Onion Sprinkled With Salt A Layer of Cucumber Sprinkled With Salt Add The Pickle Spice Repeat The Layers Cover With Vinegar and Water Cover Container and Refrigerate Wait Two Weeks If You Can Then Enjoy! Hi, come on back, we are at the Herb Garden Patio this morning having our morning coffee. I just love the smell of the  herbs in the morning breeze, it is so refreshing. Sit right down and have coffee with us and we will plan this menu for next week. Monday From The Roasted Chicken Honey Apple Chicken Salad Garlic Cheese Stix Melon Slices Tuesday Baked Ham Slices   Baked Ham Steak Miz Helen's Kitchen 3 11/2 pound Ham Steaks 1/2 cup Brown Sugar 3 tablespoons Corn Starch 1/2 teaspoon Cayenne Pepper 1 teaspoon Cinnamon 1/2 teaspoon fresh ground Nutmeg 1/2 cup Honey Mix together brown sugar, corn starch, Cinnamon, nutmeg, and Cayenne pepper. Add the honey and mix well.Layer the ham one on the other, cover the top of each ham steak with the honey mixture.Cover and bake 350 degrees for 1 hour.Option: The liquid can be drained and poured into a Sauce pan and reduced for a nice sauce to pour over the ham steaks. The Garden Gate: The Butterfly Tree

The most beautiful Tree in our Garden this time of the year is our Chaste Tree or better known as a butterfly tree. When it blooms in early June it is covered with beautiful lilac blooms. The most common form of the Chaste Tree Vitex Agnus-Castus formed multitrunked tree about 15 to 20 feet tall and wide. Large branched spikes of blue to purple flowers crown the branches in summer.
