Honey Apple Chicken Salad

I  just love the fresh greens of Spring and all the wonderful fresh salads. I recently posted a Roasted Chicken and this post is part of that series, that link follows. I  made this Honey Apple Chicken Salad and it was so delicious that I wanted to share it with you.

How To Make
Honey Apple Chicken Salad
I like to have some chicken on hand in the freezer or the refrigerator for salad, casseroles and soups. We will start this salad with some Roasted Chicken that I have in the refrigerator and the greens from my Lettuce Tub just outside my back door.

Prepare The Dressing

Dress The Apples
Toss The Salad and Enjoy!

Honey Apple Chicken Salad

For The Salad
4 cups fresh spring greens
3 cups thinly sliced Roasted Chicken Breast
2 medium Red Delicious Apples peeling on sliced thin and dressed
2 cups celery chopped
1 cup dried cherries chopped
1 cup Mozzarella Cheese shredded
1 cup roasted sunflower seeds
For The Dressing
1/2 cup Honey
3/4 cup Apple Cider Vinegar
1/2 cup Extra Virgin Olive Oil
1 teaspoon salt
1 teaspoon cracked black pepper
1 full sprig of rosemary leaves or 3 tablespoons fresh rosemary leaves or 2 tablespoons dried rosemary
Pour the honey and apple cider into a blender, add the salt, pepper, and rosemary. Slowing while the blender is on stream the Extra Virgin Olive Oil into the blender until the dressing is thoroughly  blended.
For The Apples
Slice the apples and put into mixing bowl. Dress the apples with some of the dressing and let set at room temperature for 30 minutes.
Assemble The Salad
 In a large mixing bowl, add the spring greens, chicken, celery, dried cherries, and cheese. Toss the salad with some of the dressing to your taste. Add the dressed apples and sun flower seeds. Dress with more dressing if desired toss and Enjoy!

I hope you enjoy this fresh salad as much as I enjoyed making it for you. I think it is just delicious and it was a great light lunch or dinner. I sure hope to see you back here at the cottage for Full Plate Thursday!
