Pickle Pot Time

We are going to the cucumber patch today and get some cucumbers to start a Pickle Pot. I like to start a new pickle pot every year. I cannot imagine not having a Pickle Pot in my refrigerator in the summertime. Everyone who comes here in the summer always heads for The Pickle Pot.  This was my Pickle Pot last year when I introduced The Pickle Pot to all of you.


Today we are preparing a Pickle Pot for several people and a new one for me, so lets get started. The hardest part of the Pickle Pot is waiting for them to be ready.

We Start With A Bed Of Onion Sprinkled With Salt

A Layer of Cucumber Sprinkled With Salt

Add The Pickle Spice

Repeat The Layers

Cover With Vinegar and Water

Cover Container and Refrigerate

Wait Two Weeks If You Can Then Enjoy!

The Pickle Pot

1 Quart Glass Container
1 yellow onion sliced
3 cloves garlic
3 cups cucumber slices
2 teaspoons salt
2 tablespoons pickling  spice
White Vinegar to cover onions and pickles
Water to add to Vinegar
In a clean GLASS  container begin to layer with sliced onions, then sliced cucumbers. Sprinkle the top with 1/2 teaspoon salt and 1 pod of garlic. Repeat the layer and add 1 tablespoon of the pickling spice. Repeat the layer again ending with the last tablespoon of pickling spice and the remainder of the salt. Fill the container 3/4 of the way full with vinegar and 1/4 with water until the cucumbers and onions are completely covered. Seal the jar tightly and shake up and down to distribute the seasons. Place in the refrigerator for 2 weeks before serving, (if you can wait that long). As the Pickle Pot empties just add more cucumbers and onions and your Pickle Pot is always full all summer long.

  2. Miz Helen, Could you do the same thing but instead of pickling spice, using fresh or dried dill? I have a similar recipe called quick pickles and there is absolutely no waiting for two weeks to have them - my family would never hold out! :)

    I see no reason why you couldn't use the dried or the fresh. There is dried dill in my pickling spice so that would be the same. I know what you mean about the waiting, but that's how my Grandmother taught me how to make it, I don't ever remember waiting the full two weeks. LOL!

    I used the standard cukes in the new pot that I made for this post, however in the larger pot that is pictured first from last year I use all sizes and I keep that one going year round. The standard size are really great for burgers and sandwiches. Now I am headed to the Pickle Pot to have a pickle, that's what happens a person just can't stay out of that Pickle Pot.

  18. Love pickles and this is a neat idea! Just one question... the refilling. Do you empty out any remaining onion, spices, etc or just keep adding more to it? Do you just add more cukes? I think this would be fun to do-thanks:@)

    Very good question. Just keep adding cukes and if the liquid gets to low add a mix of 3/4 vinegar to 1/4 water with 1/2 teaspoon salt and 1/2 teaspoon pickling spice back to the pot. Be sure and come back next week for more Pickle Pot ideas, you will love them. Thanks for stopping by!

  23. That reminds me of this elderly lady my mom was friends with when I was a child. My grandmother never taught my mom how to cook, so this lady used to teach my mom all the "old" ways of doing things like making homemade yogurt, hard candy, and pickles. Every time I see a jar of homemade pickles, I always think of her. Thanks for the memory!
