New Potato Salad
Delicious New Potato Salad
Sometimes there is nothing like an old fashioned Potato Salad to compliment a great meal plan. I like many of you have several different recipes that I use, but I want to share one of my favorites with you today.
Ice Cold Potato Salad
This is a real creamy and crisp salad with lots of different textures and a unique flavor from The Pickle Pot.
Lots of Fresh Garden Vegetables
New Potato Salad
Miz Helen's Kitchen
4 cups New Potatoes skin on chopped
1 cup celery chopped
1 cup red onion chopped
2 hard boiled eggs chopped
1/2 cup pimentos
1/2 cup green bell peppers chopped
1/2 cup Pickle Pot Pickles chopped Link Pickle Pot Pickles
1/2 cup Pickle Pot Pickle Juice
1 teaspoon dill weed
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon pepper
1/2 cup mayonnaise
1/2 cup Greek Yogurt
1/4 cup whole grain mustard
Boil the potatoes and cool completely before chopping. After chopping the potatoes add the Pickle Pot Pickle juice to the potatoes and mix well. Boil the eggs and cool completely before chopping. In a large mixing bowl add the chopped new potatoes, celery, red onion, boiled eggs, pimentos,pickles and bell pepper then mix well. Add the dill weed, dried basil, salt and pepper and mix well. Mix the mayonnaise, yogurt, and mustard then add it to the potato and vegetable mixture, mix well. Chill in the refrigerator for at least 2 hours before serving.

do you have any idea how much i LOVE potato salad? when i was a kid, i used to eat potato salad sandwiches. luckily for me, i was a swimmer and could use the calories...but if only i could get away with that now, i would whip this up and slide it into a soft potato roll, open a bottle of root beer and sit on the porch basking in my happiness! instead, i will invite myself to a potluck and bring this as the prize! thank you for sharing with tuesday night supper club!
