Lemon Coconut Cake
We are preparing for Easter Week here at the cottage. We will be expecting family to come in for the week so I am doing some early baking, and a surprise for some of the little ones and the big ones as well. I just love the Lemon and Coconut combination so this is my Lemon Coconut Cake for this year.
Lemon Coconut Cake
Lemon Coconut Cake
Miz Helen's Kitchen
1 2/3 cups sugar
2 1/2 cups Cake Flour
1/2 cup Butter
2/1/2 teaspoons baking powder
1 cup cold water
4 egg whites
2 teaspoons Lemon Juice
1 cup coconut
In a mixing bowl with a mixer
Cream butter gradually adding sugar. Cream until fluffy.
Sift together the flour and baking powder.
Add the flour alternately with the water.
Add the egg whites and beat vigorously. Add the lemon juice.
Add the color tint of your choice until the desired color is achieved and mix well
Pour into two 8 inch oiled and floured cake pans.
Bake at 325 degrees for 30 minutes
The Frosting
2 cups sugar
1/3 cup white corn syrup
1/3 cup water
1/3 cup water
2 egg whites
Beat the egg whites until fluffy but not dry.
Boil sugar, water and syrup until it threads, about 7 minutes.
With the mixer on high speed mix the egg whites and slowing pour in the hot syrup, beat until the right consistency to spread.
Add the color tint of your choice until the desired color is achieved and mix well
Frosting The Cake
Frost the bottom layer and add 1/2 the Coconut
Frost the top and the sides and add the remainder of the Coconut

That looks so good! I will be making a coconut cake, too! Might have to make some green coconut "grass" and pile jellybeans on top!
