Fresh Green Beans and New Potatoes
One of my favorite garden vegetable combination's is Fresh Green Beans and New Potatoes. When we go to the garden to pull the first little new potatoes, that is one of the first dishes I want to make. I remember going to the garden with my Grandmother in the early spring and digging the potatoes and the earthy smell of the fresh ground around the potato. My grandmother always made this dish and it has been a favorite of mine since I can remember, so today I want to share it with you.
Start With Fresh Green Beans
Brown The Bacon, Onion and Garlic
Mix The Green Beans and New Potatoes with The Bacon and Seasons
Cover with Water and Cook, The Smell is Heavenly!

Fresh Green Beans and New Potatoes
Miz Helen's Kitchen
8 cups Fresh Green Beans, snapped
1 1/2 pounds New Potatoes, Bite Size, skin on
1 onion, chopped
2 cloves garlic, minced
6 slices Bacon, cut into small pieces
1/2 cup Pimento's, chopped
1/2 cup Pimento's, chopped
1/4 cup Tarragon Vinegar
1/2 cup Agave or sugar
2 teaspoons salt
1 teaspoon pepper
8 to 10 cups water
Wash the Green Beans and snap them. Wash the New Potatoes.
Place the bacon in a large dutch oven or sauce pan, add the onion's and garlic, brown the bacon, onions and garlic.
Add the Pimento's, Tarragon Vinegar and the Agave or Sugar, salt and pepper and mix well.
Add the Green Beans and Potatoes and mix well.
Cover the Green Beans and Potatoes with 8 to 10 cups water.
Cook on medium heat for 40 to 45 minutes until the potatoes are tender.
