Salmon With Bacon and Balsamic Vinaigrette
We just love Salmon and when we go to Oregon to visit our daughters we always eat as much Salmon as we can. We are inland so fresh Salmon is a real treat for us. This is a different flavor for Salmon but one that we just love. Part of this recipe is from our friend Bill, I never ate his Salmon, but his wife Chelli tells me how wonderful it is all the time. So of course putting my own spin on it, this is our new Salmon recipe.
Salmon With Bacon and Balsamic Vinaigrette
Salmon With Bacon and Balsamic Vinaigrette

Ingredients
Ingredients
2 six ounce Salmon Fillets
4 slices thick cut bacon
1/2 cup extra virgin olive oil
1/4 cup Balsamic Vinegar
2 cloves garlic, minced
1/2 teaspoon sea salt
1 1/2 teaspoon fresh ground black pepper
1/4 cup dark brown sugar
Directions
In a small mixing bowl whip together the olive oil, balsamic vinegar, garlic, salt, pepper and brown sugar until creamy
Place the Salmon in a shallow baking dish and cover the salmon on both sides with the Vinaigrette
Cut the bacon slices in half and top the Salmon with the bacon slices
Bake in the oven at 400 degrees for 20 to 25 minutes, until bacon begins to crisp
Remove from oven and let set for 10 minutes

I am serving the Salmon with a Couscous Fresh Tomato Salad

We love salmon too. I'm always looking for new ways to cook it. I'll definitely be trying this.
