Whats For Dinner Next Week 3-31-13

Oh my we have been so busy here at the cottage this week. We are so excited to be preparing for our family Easter celebration, Easter Egg Hunts for the whole group, little one's , teen's and adult's there is a hunt for every age, and of course a prize egg in every group.  This is always a special holiday for us and we are so happy that you stopped by to be a part of it. Full Plate Thursday Where The Greatest Cooks On The Planet Gather  It is really hard to believe that this is the last week of March already.  I am sure that some of you are so gr ateful that this harsh winter is just about over.  I am very happy that you cou ld come out to the country today to spend a day breathing the fresh clean air, and just relaxing for a little bit in the sunshine.  We are going to have so much good food today and I can hardly wait to see what you have brought to share with all of us , on in and lets get it on the table. Spring Crinkle Cookies

A friend called the other day and said she was having a few friends over for morning coffe e the next day.  Like a good southern girl, I asked if I could bring something, she told me a plate of cookies would be great.  I didn't have a lot of time to spend so I made a decision to make a lighter version of these Crinkle Cookies.  They turned out so pretty wi th all the spring colors and tasted great with the spring flavors. Come have coffee with me and we will have some cookies.  Spring Crinkle Cookies Spring Crinkle Cookies Miz Helen's Kitchen 3 to 4 Dozen Cookies Ingredients 1 Vanilla Cake Mix 1 egg, lightly mixed 2 cups Fat Free Whipped Topping 1 cup powdered sugar 1 teaspoon raspberry flavoring 1 teaspoon lemon flavoring 1 teaspoon almond or lavender flavoring Natural Food Coloring for tinting Directions In a large mixing bowl , mix by hand with a large spoon, the cake mix, beaten egg and the whipped topping Mix until completely blended


Eggs Benedict Casserole

When we have house guest for the weekend or when we are just having a special brunch for any occasion I just love to serve this great Eggs Benedict Casserole. When we think of Eggs Benedict, usually it means very formal and labor intensive, this recipe can be casual or formal and it not labor intensive.  It is a great casserole that makes a great presentation with a Hollandaise Sauce that has fabulous flavor.  This is a dish that can be made a head of time and even frozen for latter use. I am very happy to share it with you today. Eggs Benedict Casserole Eggs Benedict Casserole Miz Helen's Kitchen Adapted From The Casserole Queens Serves 8 Ingredients 1 tablespoon Olive Oil, plus more for the pan 6 English Muffins, split and cut into 1 inch pieces 1 large leek, white and light green part only, cut into 1/4 inch thick half moons 12 oz Canadian Bacon, chopped 6 large eggs plus 8 large egg yolks, room temperature 2 1/2 cups whole milk 1 1/2 teasp

We are very busy here at the cottage this week, we have been doing our spring cleaning, Easter baking and getting ready to welcome our holiday guests.  I just love this time of the year when we can look at all the freshness of the earth and breath in the wonderful spring air.
