Spring Crinkle Cookies

A friend called the other day and said she was having a few friends over for morning coffee the next day.  Like a good southern girl, I asked if I could bring something, she told me a plate of cookies would be great.  I didn't have a lot of time to spend so I made a decision to make a lighter version of these Crinkle Cookies.  They turned out so pretty with all the spring colors and tasted great with the spring flavors. Come have coffee with me and we will have some cookies. 
Spring Crinkle Cookies


Spring Crinkle Cookies
Miz Helen's Kitchen
3 to 4 Dozen Cookies
Ingredients
1 Vanilla Cake Mix
1 egg, lightly mixed
2 cups Fat Free Whipped Topping
1 cup powdered sugar
1 teaspoon raspberry flavoring
1 teaspoon lemon flavoring
1 teaspoon almond or lavender flavoring
Natural Food Coloring for tinting
Directions
In a large mixing bowl, mix by hand with a large spoon, the cake mix, beaten egg and the whipped topping
Mix until completely blended the batter will be very sticky
Divide the mix into three parts and place in smaller bowls
Tint the bowls in the color of your choice and mix until completely blended
Mix in 1 teaspoon flavoring into the color that would correspond with it
For example: I used lemon flavoring for the yellow bowl, raspberry flavoring for the pink bowl, and almond or lavender flavoring for the lavender color
Pour the powdered sugar into a large bowl and drop a tablespoon of the cookie dough into the sugar and roll into balls, make sure the cookie dough balls are covered completely with the powdered sugar
Place the powdered sugar covered dough balls on a oiled cookie sheet
Bake 350 degrees 12 to 15 minutes or until the cookie is slightly brown on the edge

  5. Really great idea.. I'm impressed how you cooked that up. I totally lack inspiration when it comes to baking. Probably because I don't do it enough. But I have gifted 11 year old who takes care of that and who will love adding food dye to cookies. Will share this with her.

      The Whipped Cream for the has already been whipped. You can either whip the fresh cream or use a commercial cream like Cool Whip in a carton. Hope you enjoy the cookies and thanks so much for stopping by!
