Black Bean Burger
When we visit family in Oregon there is a special little garden to table restaurant where we have the most delicious Veggie Burgers. I am on an ongoing search for great veggie and bean burgers, we really love them. This Black Bean Burger is as close to my perfect Veggie Burger as we have found so far, it is fantastic and I was very excited to share it with all of you.

Ingredients
2 cups black beans, canned, drained and rinsed
1/4 cup corn, frozen, thawed
1/2 cup sweet green bell pepper
1/3 cup sweet red bell pepper
1/3 cup onion
1 jalapeno pepper, roughly chopped and seeded
1/3 cup whole wheat panko bread crumbs
1/4 cup egg substitute or 1 egg
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
salt and pepper to taste
Directions
In a food processor add the bell peppers, onion and jalapeno, pulse until very fine add the ingredients to a large mixing bowl.
In a medium bowl add the drained and washed beans and mash with a fork or masher
Add mashed Black beans to the pepper and onion mix , and mix well
Add the Corn and mix together with a fork: until incorporated.
Add the egg and mix well
Add the Panko Crumbs and mix well
Add the chili powder, cumin, garlic powder, cayenne pepper, salt and pepper
Mix all the ingredients well
Form into 5 patties, approximately 4 ounces each.
Place patties on a piece of parchment paper and refrigerate for at least 30 minutes or place in the freezer for a later use.
To Grill
Spray a piece of aluminum foil with cooking spray and place on grill over medium heat. Cook each side of the burger for about 6 minutes
To Fry
Place about 2 tablespoon of olive oil in a pan over medium heat and cook each side of the burger 4 to 6 minutes on each side.
Recipe Tip
You may have to add more Panko Crumbs depending on how much water your peppers and onions hold, plus the size of the egg
