Country Chicken and Biscuits

I always sit down with my calendar every week when I plan my menus.  When we are going to have one of those cozy nights at home all curled up in our comfy clothes, I like to plan a real comfy and cozy meal to enjoy.  Country Chicken and Biscuits is one of our favorite meals to cozy up with on a stay at home night.

Country Chicken and Biscuits

Ingredients
3 cups cooked chicken, chopped
1 1/2 cups frozen peas and carrots, steamed
1/4 cup butter
1/2 cup flour
3 cups chicken broth
1/2 cup milk
1/2 cup pimento's, chopped
1 teaspoon dried thyme
1 teaspoon poultry season
salt and pepper to taste
dash Cayenne
Directions
Add poultry season, salt and pepper to the cooked chopped chicken
Steam the peas and carrots
In a large stock pot or skillet on medium heat, melt the butter and add the flour, chicken broth and milk, stirring until smooth, add the dried thyme, salt and pepper to taste stir until blended
Add the chicken, peas and carrots and pimento's and mix well
Add more milk if your sauce is to thick
Cook on low for 10 minutes until the dish is heated through
Tips
 This Country Chicken freezes well, we like to bag it in individual servings and then you have a great little meal for one or more.

  2. Perfect for a cozy evening! I love it when it gets dark early, it's chilly outside, I can light a fire and have a cozy meal followed by a lap quilt and book....and just maybe a glass of wine....this would be just right.....

  7. Oh, Miz Helen, it did my heart good when I came over here and saw this delicious food. It's cool and rainy here today, and a warm plate of Country Chicken and Biscuits is just the ticket.   9. Miz Helen - looks like really comforting food. What you call biscuits we call scones in NZ and when we say biscuits you would say cookies! Strange the way English spoken in different parts develops differently. Cheers from Carole's Chatter
