Rosemary Skillet Chops
If I told my son that we were having Rosemary Skillet Chops today he would come right over, this is one of his favorites. Actually these chops are very simple and very flavorful, so tender you can cut them with a fork. I was trying to remember the first time I ever had these chops, it was at my aunts house, many many long years ago. I watched her very carefully as she prepared the chops, then one day I made my own. The recipe has been refined through the years, but it is still one of our favorites.

Ingredients
4 Center Cut Bone In Pork Chops
Rub
2 tablespoons fresh rosemary, chopped
1 teaspoon dried thyme
1 teaspoon salt
2 teaspoon pepper
1 teaspoon garlic powder
1 cup water
Directions
Mix all the seasons together well
Rub the dry mixture all over the chops and let set at room temperature for 30 minutes
In a tested hot skillet (to test the skillet, drop a few drops of water in the skillet and when the water drops form a rolling ball the skillet is hot enough for the chops.)
Place the chops in the hot skillet with NO OIL, leave the chop on one side until it will move without tearing the meat, then turn the chops.
Brown the chops on that side
Pour 1 cup water in the skillet and QUICKLY cover the chops and reduce the heat to low.
Cook the chops on low for 10 minutes, then turn the chops and cook 10 more minutes
Remove the chops from the heat and let set for 10 minutes before serving.
Garnish With Fresh Rosemary
