Rice Custard

Rice Custard is one of those comfort foods for me, it is soft and creamy with real gentle flavors. I had left over rice from a recipe the other day so I decided to use it to make this very old recipe. I remember my Mother making this recipe and she would sit it on the counter to cool before putting it in the refrigerator and I would just want a bowl of that custard so bad. Today when I make this dessert, guess what, I have a nice warm bowl of custard, it is so delicious, hope you enjoy it to. Rice Custard Rice Custard Miz Helen's Kitchen Ingredients 1 cup cooked rice 2 1/2 cups milk 3 eggs lightly beaten 1 cup sugar 1/2 cup raisins 1 teaspoon vanilla 1-1/2 teaspoon cinnamon 1/4 teaspoon all spice pinch nutmeg pinch salt 1 tablespoon butter Directions Mix all the ingredients in a large mixing bowl until mixed well Butter a 9 inch baking dish Pour the rice mixture into the buttered baking dish Bake 325 for 1-1/2 hour until golden brown o

Orange Chili Salmon

When we travel to the Northwest coast one of the foods we enjoy the most is Salmon. I just cannot get my fill of Salmon. We are inland here at the cottage and rarely have an opportunity to have really fresh Salmon. The other day our local market had a big promotion for fresh Alaskan Salmon and I was the first in line. My recipe for Orange Chili Salmon is a blend of the Northwest and Texas. We are hoping that our market will carry the fresh Salmon all the time. Orange Chili Salmon Orange Chili Salmon Miz Helen's Kitchen Ingredients 4- 6 ounce Salmon Fillets 1/2 cup Orange juice 2 teaspoons Orange zest 3 tablespoons brown sugar 1/2 teaspoon salt 1 tablespoon chili powder Directions Place juice in a zip top plastic bag and add the Salmon Marinate the Salmon for 45 minutes Mix the brown sugar, salt and chili powder to make a rub Remove the Salmon from the bag and rub the Salmon with the chili rub Place the Salmon in a baking dish Pour the Ora


Orange Kale and Wild Rice

We have had the most beautiful Kale in our winter garden this year and it is so nice to just go out to the garden and bring it into the kitchen and enjoy the fresh Kale. We have really enjoyed our Kale this winter in salads, smoothies and it is a great addition to rice and pasta.  Today I am making a recipe featuring the Kale with Wild Rice and Orange, I just love that blend of flavors in this dish.  Orange Wild Rice and Kale Orange Kale and Wild Rice Miz Helen's Kitchen Ingredients 3 cups Kale, chopped 1 cup Green Onions, chopped 2 garlic cloves, minced 1 tablespoon olive oil 1/2 cup Orange Juice 2 tablespoons Orange Zest 1 teaspoon salt 1 teaspoon pepper 1- 6 oz box Long Grain and Wild Rice with seasons Directions Prepare the Wild Rice with seasons according to directions and set aside Wash and chop the Kale Heat the olive oil in a heavy skillet and add the chopped onion and garlic, saute just about 1 minute Add the Kale,salt and pepper

Happy Spring Ya'll   The Winter of 2014 is behind us and I am so excited, it was to long. We are busy here at The Cottage doing spring chores. The gardens will be late this year because it has been cold for so long, but we will be planting more vegetables in the weeks to come.I love the change of seasons and looking forward to the wonderful foods that we enjoy in the spring.
