Orange Chili Salmon
When we travel to the Northwest coast one of the foods we enjoy the most is Salmon. I just cannot get my fill of Salmon. We are inland here at the cottage and rarely have an opportunity to have really fresh Salmon. The other day our local market had a big promotion for fresh Alaskan Salmon and I was the first in line. My recipe for Orange Chili Salmon is a blend of the Northwest and Texas. We are hoping that our market will carry the fresh Salmon all the time.
Orange Chili Salmon

Ingredients
4- 6 ounce Salmon Fillets
1/2 cup Orange juice
2 teaspoons Orange zest
3 tablespoons brown sugar
1/2 teaspoon salt
1 tablespoon chili powder
Directions
Place juice in a zip top plastic bag and add the Salmon
Marinate the Salmon for 45 minutes
Mix the brown sugar, salt and chili powder to make a rub
Remove the Salmon from the bag and rub the Salmon with the chili rub
Place the Salmon in a baking dish
Pour the Orange juice from the bag on top of the Salmon
Bake at 350 degrees for 20 minutes
Marinate The Salmon In Orange Juice
Rub The Salmon With The Chili Rub
Bake The Salmon
Enjoy!
Serving The Orange Chili Salmon with Orange Kale and Rice
We brought a little of the Northwest to the cottage and a little of Texas to the Salmon and it was a great combination. I sure am happy that you were able to stop by and enjoy this time with us today, your visits are always very special to us!

Have to confess we're a bit spoiled for salmon in the UK ... always available and so we end up eating some most weeks. Always good to get some new ideas for cooking it as easy to get in a rut. Alice @ Mums Make Lists
