Ladies Club Chicken Salad
One of the Ladies Club's that I belong to always have a Mothers Day luncheon to honor all the Mom's in our community. I serve on the food committee and when we are planning the event, my friends always say, you are bringing the Ladies Club Chicken Salad, right? Well of course my answer is yes, it really is a great recipe. This is a delicious salad recipe that can be used for many occasions and will be a hit every time.
Ladies Club Chicken Salad
Miz Helen's Kitchen
Ingredients
3 cups roasted chicken,(breast meat), chopped
2 cups celery with leaves, chopped
2 cups red or green grapes, chopped
1 cup Sour Cream
1 cup Mayo
1/2 cup heavy cream
1 teaspoon thyme leaves
1 teaspoon parsley
1 teaspoon dill weed
1 teaspoon salt
1 teaspoon pepper
dash cayenne pepper
2 cups cooked large elbow macaroni
Directions
In a large mixing bowl add the chopped chicken, celery, grapes and macaroni and mix well.
In a small mixing bowl, add the sour cream, mayo, and heavy cream, mix well.
Add the thyme, parsley, dill weed, salt, and pepper's to the mayo mix and mix well.
Pour the seasoned mayo mix to the chicken mixture and mix well.
Refrigerate for at least 4 hours and over night is better allowing the wonderful flavors develop.
