Red Velvet Pie
I wanted to make a very special pie for a dinner party that I was hosting and this is the pie that I finally decided to make. I used to make this pie for a friend many years ago and it is a wonderful pie that is so full of chocolate goodness. It reminds me of a cheese cake but has the comfort of a pie, a very versatile recipe that can be served for a formal dinner party or an informal family dinner. We really enjoy this Red Velvet Pie and sure hope you will too!

Our Guest At The Dinner Party Loved This Pie
Red Velvet Pie

Ingredients
1 9 inch pie crust
1 cup semisweet chocolate chips
1 1/2 cups sugar
1/2 cup cocoa powder
1/4 teaspoon baking powder
8 tablespoons butter, melted
4 eggs
1 teaspoon raspberry extract
1 - 1 ounce bottle of red food coloring (See Recipe Tip)
8 ounce cream cheese, softened
Directions
Prepare the pie crust.
Very carefully sprinkle the chocolate chips on the bottom of the pie crust. and set aside.
Melt the butter and set aside.
In a medium bowl, mix together 3/4 cup of the sugar, baking powder, cocoa, 3 of the eggs, extract, and melted butter. Add in the food coloring and whisk together until the mixture is smooth.
Pour the chocolate mixture over the chocolate chips in the pie crust.
In a medium bowl, mix together 3/4 cup of the sugar, 1 egg, and the cream cheese. Beat together until completely smooth and creamy.
A large spoonful at a time place the cream cheese mixture on top of the chocolate mixture in the pie crust.
With the tip of a knife, swirl the cheese mixture with the chocolate mixture, careful to leave the large area's in tack.
In a preheated 275 degree oven, bake the pie for 1 hour.
Turn the oven off and let cool in the oven for 1 hour.
Remove the pie from the oven and refrigerate the pie for at least one hour before slicing.
Keep the pie refrigerated until serving.
Enjoy!
Recipe Tip
If you can't use Red Food Dye's because of allergies, use 1 ounce of beet juice.
Be sure to leave the pie in the oven to cool as that is part of the cooking process.

Pour The Chocolate Mixture Over The Chocolate Chips
Dollop The Cream Cheese Mixture On Top Of The Chocolate Mixture
Swirl The Cream Cheese With The Chocolate
Bake and Cool
Ready To Serve

ReplyDeleteI have a question about the dye as well. If we put the dye in the cream cheese mixture, then how will we have the white color in the pie? I'm in love with this recipe and can't wait to make it! I just want my pie to look as beautiful as the one in the picture! :)

DeleteI put it in the wrong place and now it is corrected, you would have ended up with pink cheese, this is the correction.

Another tip, be sure and let it cool in the oven because that is part of the cooking process. Then to refrigerate so it will completely set.

The recipe calls for unsweetened cocoa powder, correct? I don’t bake a whole lot and hope to make this for my daughter’s 18th birthday coming up next month.
