Seared Scallops In Garlic Pepper Sauce
Any kind of seafood is a real treat for us here at the cottage. We are about 3 to 4 hours from the coast so we don't get a lot of fresh seafood. We usually have our local fish that we catch from the lake or that a good neighbor has caught and given us and that is usually, Catfish, Crappie, Bass or in season Craw Fish. They were having a sale on Scallops at the local market last week so I bought these Scallops to surprise my husband, he just loves Scallops. I seared them in a real special Garlic Pepper Sauce and he wanted more, well next time maybe these were $1.85 each on sale, they were real special!

Served On A Bed Of
Mustard Greens and Corn with A Bacon Vinaigrette
Scallops In Garlic Pepper Sauce

Ingredients
6 fresh Scallops, washed and dried
3 tablespoons butter
2 tablespoon olive oil
1/2 cup green bell pepper, chopped fine
1/2 cup red bell pepper, chopped fine
1 jalapeno pepper, seeded and chopped fine
1/2 cup onion, chopped fine
3 garlic cloves, minced
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon cayenne pepper
1 lemon
Directions
In a saute skillet, melt the butter and add the olive oil.
Saute the onions, peppers, and garlic, until the onions are clear.
Add all the seasons and cook for 1 minute.
Drain the vegetables into a small bowl retaining the butter and oil in the skillet.
Add the Scallops to the hot skillet and sear the Scallops until done.
Add the vegetables back to the skillet and simmer until serving.
Squeeze the juice of 1 lemon over the dish before serving.
Serve immediately.
