Southwest Quinoa Stuffed Peppers
We were so excited recently to have a visit from one of our Daughters. She is Vegetarian so I wanted to have some real special meals for her while she was visiting. Southwest Quinoa Stuffed Peppers is one of the delicious recipes that we made for her while she was visiting. We will be making these Stuffed Peppers over and over, plus they freeze really well. These stuffed peppers are full of the southwest flavor with wonderful veggies and Quinoa blended with cheese, a meal stuffed in the pepper.

Southwest Quinoa Stuffed Peppers
Miz Helen's Kitchen
Ingredients
3 cups cooked Quinoa
6 to 8 Bell Peppers
1 cup corn kernels
1 cup black beans, rinsed and drained
1/2 cup diced tomatoes
1/2 cup roasted green chilies, chopped
1 teaspoon cumin
1 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon cayenne pepper
3/4 cup pepper jack, shredded
1/2 cup feta cheese, crumbled
1/2 cup water
Directions
Cook the Quinoa according to package directions. I used my rice maker and the Quinoa is beautiful.
In a large mixing bowl, combine the cooked Quinoa, corn, beans, tomatoes, and green chilies. Mix well.
Add all the seasons and mix well.
Add the cheese and mix well.
Cut The top off the pepper and clean the inside. Stuff the pepper with the Quinoa mix.
Place the stuffed peppers in a baking dish and add 1/2 cup water to the bottom of the dish.
Bake at 350 degrees for 30 minutes until the pepper is tender and the stuffing is heated through.
Serve hot with Miz Helen's Guacamole and Garden to Table Canned Salsa
