Italian Summer Salad
I love going out to the garden and gathering a basket of vegetables to bring into the kitchen and create a wonderful dish. The Italian Summer Salad is one of those awesome garden to table creations that features the fresh flavors of the vegetables tossed together with a great Italian Dressing. This is a recipe that you can change every time you make it, using different vegetables with different dressings. I am sharing with you today our favorite way to have this delicious dish.

Let Chill In The Refrigerator For 2 Hours Before Serving

Ingredients
For The Vegetables
1 pound spaghetti, broke in half
3 cups cherry tomatoes
1 cucumber ,chopped
1 medium zucchini, chopped
1 medium yellow summer squash, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 onion, chopped
1 cup sliced black olives
3 cups mozzarella cheese, chopped
1 teaspoon salt
1 teaspoon pepper
For The Dressing
1/2 cup olive oil
1/2 cup apple cider vinegar
3 tablespoons dried sweet basil
2 tablespoons dried oregano
1 teaspoon garlic powder
2 tablespoons sugar
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon Tabasco Sauce or to taste
Directions
Wash and chop the vegetables. Place the vegetables in a large mixing bowl and add 1 teaspoon salt and 1 teaspoon pepper, toss and set aside.
In a mixing jar, pour together the olive oil, vinegar, Tabasco Sauce, basil, oregano,garlic powder,sugar, 1 teaspoon salt and 1 teaspoon pepper. Put the lid on the mixing jar and shake until the mixture looks creamy.
Pour the dressing on the vegetables and mix well. Set aside and prepare the pasta.
Cook the pasta in boiling salty water for 9 minutes, drain and rinse with cold water.
Pour the pasta in with the vegetables and toss, add the mozzarella cheese and toss.
Chill the salad in the refrigerator for 2 hours before serving.
Recipe Tips
If there is not time for making a homemade dressing, any Italian Dressing can be used, one that we like is Roasted Red Pepper Italian Dressing.
Any kind of pasta can be used, just make it your own.
