Skillet Succotash

I just love a tasty Succotash, it is a great side dish or a stand along dish, just add a salad and of course some corn bread. I love to make a Succotash when the garden is filled with fresh vegetables and the blend of all the vegetables and fresh herbs just melt in your mouth. Although this recipe today is made with fresh vegetables from the garden it can be made when there is snow on the ground with frozen vegetables, or home canned vegetables from the summer harvest. We love this recipe and sure hope you enjoy it as much as we do.

We Start This Dish With A Little Bacon and Vegetable Saute'

Add The Remaining Vegetables

Skillet Succotash
Miz Helen's Kitchen
6 thick slices bacon, chopped small
3 or 4 Roma Tomatoes, chopped
1 green bell pepper, chopped
1 medium onion, chopped
2 cloves garlic, minced
4 cups corn, cut from the cob
2 cups cooked Lima Beans
1 teaspoon salt
1 teaspoon pepper
dash cayenne
1/2 cup apple cider vinegar
4 tablespoons sugar
1/4 cup fresh basil leaves, chopped
Directions
In a hot black iron skillet, saute the bacon, onions, bell pepper and garlic, until the onions are clear.
Add the corn and Lima Beans, continue to saute for 5 more minutes.
Add the salt, pepper, cayenne and mix well.
Mix the cider vinegar and sugar together well, then pour it over the vegetable mix, stir well.
Simmer the dish for 5 minutes.
Remove from heat and toss in the fresh chopped basil ( if fresh is not available, use dried).
Serve hot and Enjoy!
