Watermelon Mint Salad

When I was a little girl I remember going to my Grandmother and Grandpa's farm in the summer for vacations. My Grandpa would sometimes take me to the watermelon patch on the farm and let me watch the farm helpers load the melons on the truck and then we would take them to the farmers market, it was so much fun, and that was the best watermelon ever. When I was making this watermelon salad for a party recently I thought of my Grandpa and all his wonderful watermelons. This is a fun, easy recipe, and one that everyone at the party loved.

My assignment for the Secret Recipe Club this month has been Ellie at The Hobo Kitchen, I was excited to get her blog, because it was already familiar to me.This is the second time I have had Ellie's blog as an assignment, in March of 2015, I made her Praline French Toast. Ellie is originally from Nassau in the Bahamas and came to the USA in the 90's, and now resides in Hoboken, New Jersey. She has been blogging since 2008 and has lots of awesome recipes on her blog. Some of the awesome recipes I found there is of course the Watermelon and Mint Salad, and Sweet and Salty Edamame.

We Are Starting With A Ripe Watermelon

Remove The Meat Of The Melon

Mix The Melon Chunks With The Mint and The Juice

Add The Feta Cheese

Pour The Melon Back Into The Melon Half

Watermelon Mint Salad
Miz Helen's Kitchen
Watermelon Chunks
Lime or Lemon Juice  (For Medium Melon I used 1/2 cup Lime or Lemon Juice)
Mint Leaves (8 to 10  mint leaves)
Feta Cheese ( For Medium Melon I Used 1 cup Feta)
Optional:
Salt, Pepper, Crushed Red Pepper
Directions
Half the watermelon and remove the meat from the half of watermelon.
Chop the meat into chunks and place in a large mixing bowl.
Chop fresh mint leaves and add to the watermelon.
Mix the melon well with the juice and leaves.
Add the Feta and mix well.
Put the chunks back into the melon half.
Serve cold.
