10 Salads and Sides Summer 2015

The Summer of 2015 brought some different weather and lots of wonderful food. We had lots of rain in the spring and summer so we had a great harvest from the garden thru out the season. I love creating recipes from Garden to Table and these are some of our favorites from this season.


Whats For Dinner Next Week 8-30-15

We have really enjoyed some great porch days this week, we have had some rain so everything looks refreshed and cooled off a bit. We are starting to get our fall garden ready to plant, we will be looking forward to having lots of turnips and greens for late fall and early winter. We will be picking the last of the summer garden this week and canning our End of Summer Soup, it sure is good when the snow is on the ground. Look for the End of Summer Soup on the menu this week.


Full Plate Thursday 8-27-15

Ready Set Go! School has started, the school zones are being enforced and the little ones are back in the cross walks, just a reminder to drive with care around all our little ones. I sure am glad to see you today, come on out on the porch with me, its been raining and it is really comfortable to be out on the porch. All of you have the best food in blog land and I am so thankful that you bring it here, lets get our party started, I'm hungry!


Bruschetta

Early last spring I posted a photo to my Face Book Page of a Bruschetta that I was serving for a weekend party, I promised a recipe would come later and here it is. I don't know about you but there are stacks of notes on recipes that I am working on and then finally one day a certain recipe works it's way to the top and that's the one for today and on this day it is the Bruschetta. I always make a double batch of this because it disappears quickly from the serving platter. The great thing about this recipe is that you can also use the tomato base as a salad that is fabulous. The dressing is really special because it is made with a combination of oils. I sure hope you enjoy the recipe as much as we do.


St. Louis Oven to Grill Ribs

We love to try different rubs for our grilling experience, the rub and method for these St. Louis Style Ribs is one of the best we have had in a very long time. Most recipes have the ribs cooking for long hours at a very low heat, this recipe is at a higher heat for a shorter time. This is a recipe that we will be making over and over, these Ribs have a fantastic flavor that left nothing but the bones on the plate at the end of dinner.


Whats For Dinner Next Week 8-23-15

The last full week of August and where has the summer gone? We are having a wonderful dip in the temperature plus a great rainy day which is making me start thinking about the fall. It has been Green Chili season here and everywhere you go the smells of Green Chilies are in the air. Most of the markets have huge roaster's on their parking lots and the chilies are fantastic! Where The Greatest Cooks On The Planet Gather It is so good to see you today, every week we have the best food on the internet shared at this party and that is all thanks to you amazing cooks, I am truly honored to have you share with us! It's Hatch Chili season here and the parking lots are filled with the aroma of roasting chilies, oh my it is a heavenly smell. This week I am sharing with you my Baked Green Chili Fajitas and I sure hope you enjoy them. Spicy Blackberry Jam

We have wonderful Blackberry bushes that have brought an abundant harvest this year. We love our blackberries and often times have cobblers, pies, crisp, along with berries and cream. Some of the berries never make it out of the garden, we enjoy them right there. One of our favorite recipes for the berries is our Spicy Blackberry Jam, my Grandmother used this recipe every year for her berries.This year some folks will find one of these special little jars of jam in their Christmas Box. Sure hope you enjoy this old fashioned recipe for the berries.


Baked Green Chili Fajita's

It's Hatch Chili season and we love those chilies. We like to get the fresh chilies, roast them and enjoy lots of different dishes with the green chilies. Often times after roasting we freeze them and they sure are good in dishes all winter. Baked Green Chili Fajita's is one of the delicious dishes that we make with the chilies. I sure hope that you enjoy this recipe as much as we do.


Whats For Dinner Next Week 8-16-15

I know that some of you are getting ready to start school, while others are enjoying the last days of summer vacation. I remember when the schools did not start back until after Labor Day and finished up around May 15th, then we had the whole summer for vacations. We are enjoying being back in our cottage with our new air conditioner system, it is working really well. We recently repainted the exterior of our cottage and I promised you a look when we were finished, that post is at the end of the menu for this week. I hope you will like the new Slow Cooker recipe we have this week, it will be perfect for a back to school special!

Cottage Paint Adventure

We moved to our little country cottage 8 years ago and we have had so much fun improving the property. We owned the property for a number of years and used it as a rental property until we retired and moved from the city to the country. We had painted the exterior of the house and the little tool shed at the time we moved in, but time passes and it was time for a fresh coat of paint. We are really happy with the finished product!


Slow Cooker Cheesy Ranch Chicken Sandwich

I love a great Slow Cooker recipe to help me out on a busy day, and they are great for a potluck, or a weeknight supper. This is a great recipe that can actually be used in several different ways. It can be served with the whole chicken for a dinner plate with sides. Add a splash of salsa and some baked tortilla chips and it is a great dip. Today we are making sandwiches, and they are delicious, I am excited to share this recipe with you and sure hope you enjoy it.


Whats For Dinner Next Week 8-9-15

August temperature's have arrived in Texas and guess what happened at the cottage?  Our air conditioning system gave it's last blast of cold air.  We live in the country and it takes longer to get things repaired there, so we have been displaced for the past week but we are hoping to be back in the house the first part of this week with a whole new system.  What happens with last weeks menu, we just took it with us, I can cook anywhere.  We will hope that this week's meal plan will be prepared right there in Miz Helen's Kitchen.

Where The Greatest Cooks On The Planet Gather August is in full swing already and it looks to be a packed month. We just finished our Grandma's Summer Camp 2015, we had so much fun, and now the cottage is quiet again since everyone has gone back home to get ready for school starting. I went to the peach orchard with a friend and came back with some wonderful peaches that made great Ice Box Pickled Peaches, that I will share with you today. I always look forward to our party together to catch up on your news and share your amazing food. Let's get this party started!


Grandma's Summer Camp 2015

Our Grand Children have been coming to our home for spring and summer visits since they were babies, and I am so happy the tradition continues. At one point along the way we would have a house full, and we would all gather at the lake house where we would have more activities. It was during that time frame that we named the adventure Grandma's Summer Camp. Some of those kids are now grown and have kids of their own, and I am thrilled when they come back and when some bring their kids. Oh my goodness who ever thought that we would be so blessed to be able to have our camp for Great Grands!


Ice Box Pickled Peaches

My Grandmother often times had pickled peaches setting on the table at meal time, and they were so good and the flavors seemed to blend with whatever she was serving that day. It was fun to go to the peach orchard with her and gather peaches, my gathering consisted of picking the ground peaches and of course I was allowed to eat one. My Grandmother would take that peach and wipe it of with the end of her apron, hold it up look at it, then she would smell of it and say that is a good peach, you can have that one, and it was wonderful! When I am peeling peaches for my pickled peaches there is a smile on my face just remembering those special moments with my grandmother. I love making these Ice Box Pickled Peaches and sure hope you enjoy this recipe.


Whats For Dinner Next Week 8-2-15

August Has Arrived! August is here and it is hard to believe in our part of Texas that we have had a very mild summer so far. We just last week hit our 100 degree temperature's and its already cooler with rain, we love it! The summer garden has almost stopped producing and it will soon be time to plant for fall. I will be finishing up my canning this week. I am trying to use up all the peaches before they are gone for the season. Those awesome Peach Cobbler Cupcakes are on the menu this week!
