Baked Green Chili Fajita's
It's Hatch Chili season and we love those chilies. We like to get the fresh chilies, roast them and enjoy lots of different dishes with the green chilies. Often times after roasting we freeze them and they sure are good in dishes all winter. Baked Green Chili Fajita's is one of the delicious dishes that we make with the chilies. I sure hope that you enjoy this recipe as much as we do.

Baked Green Chilies Fajita's

Ingredients
1 pound boneless, skinless chicken breasts, cut into strips
2 tablespoons olive oil
1 teaspoon salt
2 teaspoons chili powder
2 teaspoons cumin
1 teaspoon garlic powder
3/4 teaspoon dried oregano
1/8 teaspoon cayenne
1 medium onion, sliced
1 jalapeno, seeded and chopped
1 small red pepper, sliced in strips
1 small green pepper, sliced in strips
1 cup stewed tomatoes, chopped
1 cup roasted green chilies, chopped
1 cup red salsa, of your choice
Directions
Put the chicken strips into a 9X13 baking dish. Pour the olive oil over the chicken and toss the chicken to coat it with the oil.
Mix the salt, chili powder, cumin, garlic powder, oregano, and cayenne together in a small bowl.
Sprinkle the dry mix all over the oiled chicken.
In a large bowl, mix the onion, jalapeno, red pepper, green pepper, stewed tomatoes, roasted green chilies, red salsa, together until mixed well.
Mix the vegetables with the chicken in the baking dish.
Bake at 400 degrees uncovered 25 minutes, until the chicken is cooked through and the vegetables are tender.
Serving with Pico de Gallo

Ingredients
2 roma tomatoes, chopped
4 green onions, chopped with tops
1 jalapeno, seeded and chopped
1/2 cup fresh cilantro, chopped
juice of 1 lime
zest of 1 lime
1 teaspoon salt
1 teaspoon pepper
Directions
Mix together and let set for 1 hour before serving.

Helen, I love dishes made with Hatch green chiles. This sounds good. I have to use up my chiles leftover from last season before I can get some of the new crop. I'm going to use it for taco sauce and can it tonight. I like this time of year when the smoke from the chile roaster in the parking lots have that fresh roasted chile aroma.

Boy this sounds good! Believe it or not, this Philly Girl has never even laid eyes on a Hatch Chile, but I truly hope to one day:@)
ReplyDeleteOh, I love Hatch chilies! A guy I used to work with would take a group of his friends ~ he called them his "mules" ~ to New Mexico each year and bring back tons of these wonderful pepper. I love having them in the freezer too ~ just the perfect addition to any dish we make during the winter. Of course, they're good anytime! :) I can't wait to try this dish. Thanks so much for sharing!
