Ice Box Pickled Peaches
My Grandmother often times had pickled peaches setting on the table at meal time, and they were so good and the flavors seemed to blend with whatever she was serving that day. It was fun to go to the peach orchard with her and gather peaches, my gathering consisted of picking the ground peaches and of course I was allowed to eat one. My Grandmother would take that peach and wipe it of with the end of her apron, hold it up look at it, then she would smell of it and say that is a good peach, you can have that one, and it was wonderful! When I am peeling peaches for my pickled peaches there is a smile on my face just remembering those special moments with my grandmother. I love making these Ice Box Pickled Peaches and sure hope you enjoy this recipe.

Pies, Cobblers, Cakes, Cupcakes, Pickles, Relish, and Just Eating!
Use Any Container, Just Make Sure It Is Glass
The Flavor Of These Peaches Is Just Fantastic!
Ice Box Pickled Peaches
Miz Helen's Kitchen
Makes 2 pints
Ingredients
8 large ripe peaches
2 Sprigs of fresh mint
1/2 cup apple cider vinegar
1/2 cup white balsamic vinegar
1 cup water
1/2 cup sugar
1 teaspoon all spice
1 teaspoon salt
Directions
In a small saucepan, mix the vinegar's, water, sugar, allspice, and salt.
Bring the vinegar mixture to a boil, then remove from heat and stir well.
Let the vinegar mixture set and cool to room temperature
Peel the peaches and remove the seed. Slice the peaches in a medium slice.
Pack the peaches into a glass container with one spring of the mint.
Pour the cooled vinegar mixture over the peaches and seal with a tight seal.
Refrigerate for 12 hours before serving.
If there is any left after serving, keep refrigerated.

ReplyDeleteThese bring back memories for me, too, Helen. My mother made them every summer...she bought the peaches as we didn't have a peach tree. I have no idea what recipe she used (my brother has most of her recipes and I'll see if the peach recipe is there) . I am going to make these very soon.

DeleteI think the best way the flavor can be described is to say they are sweet and savory. I don't think they are to briney as there is not that much salt in the recipe. We just love them, hope you try them and thanks so much for stopping by. Have a great day!
