We Just Love This Dish
Bacon Dilly Potatoes
Miz Helen's Kitchen
Ingredients
7 to 8 cups potatoes, peeled and large chop
8 bacon slices, chopped
6 green onions
2 cloves garlic, minced
1 (4ounce) jar Pimentos, diced
1/4 cup apple cider vinegar
2 tablespoons whole grain mustard
4 tablespoons dried or fresh dill
1 teaspoon salt
1 teaspoon pepper
dash cayenne
Directions
Peel and cut the potatoes. In a large stew pot cover the potatoes with salted water. Cook over medium heat until the potatoes are just tender. Don't over cook the potatoes or they will be to soft. When the potatoes are tender, remove from heat and drain. Set aside.
In a hot skillet cook the bacon pieces until crisp, add the green onions and garlic. Continue to cook until the onions are clear.
Mix the vinegar, mustard, dill, salt and peppers together and mix well.
Add to the bacon mix and stir in the pimentos (do not drain). The mix will begin to thicken and at that time add the potatoes and toss the bacon mix with the potatoes.
Move to a serving dish and serve hot.
Enjoy!
