Nutty Pumpkin Bites
These Nutty Pumpkin Bites are just right for little hands and just a bite for all the adults. The little bites are just packed with fruit and nuts with a crunchy outside and a flavorful inside. I will have these sitting out for my all the folks who stop by to have a little cup of cider and stand by the fire to warm up on a lovely fall afternoon or evening.

Nutty Pumpkin Bites
Miz Helen's Kitchen
Ingredients
1/2 cup pumpkin puree
1/2 cup vegetable shortening
1 cup sugar
2 cups flour
1 teaspoon soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon pumpkin spice
1 tablespoon brown sugar
1 teaspoon vanilla
1/2 cup pecans, chopped
1/2 cup raisins
1/2 cup dried cranberries
Directions
In a mixing bowl cream the shortening with the sugar. Add the pumpkin puree and vanilla, then mix well.
In a small bowl add the flour, soda, salt, cinnamon, pumpkin spice and brown sugar, mix well.
Add all the dry ingredients to the pumpkin mixture and blend well.
Stir in the raisins, cranberries and nuts.
Using a 1 teaspoon dipper, place the cookies on a un-greased cookie sheet.
With the bottom of a small glass or measure cup press all the cookie balls to flatten.
Bake at 375 degrees for 10 to 12 minutes.
Let cool on a rack before serving.
I noticed that some of mine were missing from the cooling rack, wonder what happened?
