Irish Potato Mounds
My Irish Grandmother had so many recipes for potatoes and they were all delicious, but the Irish Potato Mounds were really one of my favorite. This is a very easy recipe and can be made with either fresh mashed potatoes or left over mashed potatoes. Another plus for this recipe is that the mounds are baked and not fried, making the recipe a little healthier. I really love these little mounds of goodness and sure hope you enjoy them!
A Plate Of Irish Potato Mounds Will Make Anybody Happy!
Irish Potato Mounds

Ingredients
2 pounds white Irish Potatoes
8 ounces cream cheese
1/2 cup sour cream
1/4 cup parsley, chopped
2 cloves garlic, minced
6 tablespoons shallots, chopped fine
1 teaspoon salt
1 teaspoon pepper
2 tablespoons flour
2 eggs,beaten
1/2 cup butter, melted
Paprika for garnish
Directions
Peel the potatoes and chop in large chunks. Place the potato chunks into a medium stew pot and cover with salty water. ( Potatoes are always better when boiled in salty water). Boil the potatoes until tender, drain the water.
Add the cream cheese and sour cream then mash the potatoes.
Add the parsley, garlic, shallots, salt and pepper. Mix well.
Stir in the flour and add the eggs, whip the mixture together until well blended.
Scoop the potatoes into mounds and place on a shallow baking dish.
Drizzle the melted butter over the mounds and garnish with a sprinkling of paprika.
Place the baking sheet in the oven and bake at 375 degrees for 25 minutes or until golden brown.
Recipe Tip
These mounds can be prepared the day before and placed in the refrigerator until time to bake.
This is a great side dish and is great with a little dollop of sour cream on top.

Yum! I love anything mashed potato related, especially if there is cheese involved. These sound delicious!
