Farmers Goulash
We love goulash and have several recipes that we enjoy, but this is one of our family favorites. Whenever we are doing projects and some of the kids come to help, I need a hardy dish for those guys to enjoy. One year I had made this for some of the boys and they named it Farmers Goulash, just a large bowl of wonderful noodles with a very flavorful sauce.

Ingredients
1-1/2 pound ground chuck
1 red bell pepper, chopped
1 green bell pepper, chopped
1 onion, chopped
3 cloves garlic, minced
8 ounce can tomato paste
14.5 ounce can diced tomatoes
2 cans (5.5 ounce) cans Spicy Hot Vegetable Juice
1-1/2 teaspoon salt
1 teaspoon pepper
1 teaspoon oregano
2 teaspoons basil
16 ounce package Pappardelle Pasta
Garnish with Parmesan Cheese
Directions
In a heavy, hot stew pan, brown the ground chuck until cooked through.
Add the chopped red and green pepper, onion and garlic. Saute the vegetables with the ground chuck until the vegetables are soft and the onions are clear.
Add the tomato paste and diced tomatoes, stir in well.
Add the Spicy Hot Vegetable Juice mix well.
Add the salt, pepper, oregano and basil.
Cover the pot and cook on low for 15 minutes, reduce heat to simmer until ready to serve.
While the sauce is cooking, boil the pasta according to package directions.
Right before the pasta is ready, pour the thick meat sauce into a very large pasta bowl.
When the pasta is ready, drain and then place on top of the thick meat sauce in the pasta bowl, then toss together.
Garnish with Parmesan Cheese.
