Grilled Pepper Jelly Chicken
We love spicy food here at the cottage and this recipe is a sweet and spicy combination that is delicious. This chicken sits in a wonderful marinate before cooking that leaves it so tender and when you bite into the chicken it just explodes with flavor. This recipe is best grilled on your outdoor grill but will be just as good grilled indoors or roasted in the oven. I recently made the recipe for a cookout and our guest just loved it, we will sure be making it over and over.

Grilled Pepper Jelly Chicken

Ingredients
4 chicken wings
4 chicken legs
4 chicken thighs
For The Marinade
1/2 cup apple cider vinegar
1/2 cup water
1 tablespoon garlic salt
2 teaspoons onion powder
2 teaspoon black pepper
1/2 teaspoon cayenne pepper
3 tablespoons Worcestershire Sauce
1/2 teaspoon Tabasco Sauce
For The Glaze
1(10 ounce) jar (Tabasco) Pepper Jelly
Directions
Wash and dry the chicken.
In a large plastic bag or container pour the vinegar, water, garlic salt, onion powder, black pepper, cayenne pepper, Worcestershire Sauce and Tabasco Sauce and mix well. Add the chicken pieces making sure that the pieces are covered well. Place the bag or container in the refrigerator for at least 3 to 4 hours.
In a small sauce pan warm the Pepper Jelly.
Remove the chicken from the marinade to the grill.
Grill the chicken basting the Pepper Jelly on the chicken with every turn. Keep the Pepper Jelly warm on the grill. You will use all the jelly.
When the chicken is done remove from the grill and serve.

If you are roasting in the oven, roast at 425 degrees for 1 hour.

ReplyDeleteI thought of you with your love of spicy food when I made a corn salad the other day. It was SO good and SPICY because I put ONLY 2 tablespoons of my peach habanero jam in it. It was too hot for my husband, who loves spicy food and salsa. LOL! I loved it. So I promised him that the next time I won't make it too spicy. I'd love to make your El Rancho Corn Salad. Maybe it will be less spicy. :)
