Strawberry Gazpacho
When my kitchen counter begins to fill with fresh garden vegetables, I begin to search for just the right recipe to use for the wonderful fresh vegetables. Today I am making a fantastic Gazpacho, a cold spicy soup with a different combination of cucumbers, peppers and strawberries which blends a flavor that is fresh and delicious. I am serving this Gazpacho for a small luncheon today, but it could be served for a larger event or a family supper with a nice hot bread. We love this soup and sure hope you enjoy it!

Vegetables and Strawberries
Strawberry Gazpacho
Miz Helen's Kitchen
Ingredients
Serves 10 to 12
6 cup Strawberries, hulled and quartered
2 cucumber's, peeled and chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 tablespoon dried thyme
2 teaspoons salt
1 teaspoon pepper
1 teaspoon garlic powder
1/2 teaspoon cayenne
1 (5 1/2 ounce) can Spicy Hot Vegetable Juice
2 (5 1/2 ounce) can's Vegetable Juice
For The Garnish
Sour Cream
Fresh Thyme
Directions
Prepare all the vegetables and strawberries, place them in a very large bowl.
Sprinkle the thyme, salt, pepper, garlic powder, and cayenne over the vegetables and strawberries, mix well making sure the seasons are distributed evenly.
Pour the liquid juice over the vegetables and strawberries, mix well.
Cover the bowl with a plastic wrap and refrigerate for 3 to 4 hours, even over night is fine.
In a food processor or blender, in small amounts add the vegetable and strawberries and blend until it is liquefied. At this point you can make this as thin or as thick as you like, it is a personal preference.
Taste the Gazpacho and adjust the seasons.
Serve cold and garnish with sour cream and fresh thyme.
