Frito Garden Pie
We love a great pot of chili and just about always have some left over for the next day. One of the awesome dishes that I make with the left over chili is a Frito Pie. I have been making Frito Pie for more years than I can count and it was one of our favorite dishes on Friday Night Football Nights when the kids were in school. The other day I made this awesome pot of Garden Chili and of course we had lefts overs and I thought why not make a Frito Garden Pie. It was out of this world delicious, wish I had thought of this a long time ago.
A Delicious Frito Garden Pie
We Start With A Great Layer Of Garden Chili
Add A Layer of Frito's and Cheese
Then Another Layer of Chili
Top With Chips and Chips
Frito Garden Pie

Ingredients
4 cups Garden Chili or Your favorite Chili
4 cups Frito Corn Chips
1 cup sharp cheddar, shredded
1 cup Montrery Jack Cheese, shredded
Garnish with Limes and Cilantro
Directions
Pour 1 cup of the Garden Chili in the bottom of a 8X11 baking dish.
Layer 2 cups of the Frito Corn Chips on top of the chili.
Layer 1/2 cup of the cheddar and 1/2 cup of the Montrery Jack Cheese on top of the Frito Corn Chips.
Layer the remainder of the Garden Chili on top of the cheese layer.
Layer the remainder of the Frito Corn Chips and then top with the remainder cheese.
Bake at 350 degrees for 25 minutes or until the cheese is melted and the mix is bubbling.
Garnish with Limes and Cilantro

My goodness! What a great way to enjoy a great dish a second time. I used to eat Frito pie for lunch at a local diner. It was soooooo good. It's been a while. Thanks for the tip.
