Zoodles with Fresh Tomato Saute
We love Zucchini and grow it in our garden so this time of the year we are developing new recipes for our garden harvest. The Zucchini produces the last of the season here so we have more Zucchini than just about anything else. I got a Zoodle machine as a birthday gift and couldn't wait to use it, I am having so much fun with that machine. Today I am making you a great Garden to Table dish with fresh cherry tomatoes, onions, peppers and a blend of fresh herbs. I sure hope you enjoy this recipe as much as we did, it will be one that we will make again and again.

Ingredients For Zoodles with Fresh Tomato Saute
4 Zuchinni, spiralized
4 cups cherry tomatoes, whole
1/2 cup onion, chopped
1/2 cup green bell pepper, chopped
1/2 cup red bell pepper, chopped
4 cloves garlic, minced
3 tablespoons butter
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon pepper flakes
1-1/2 teaspoon oregano
1/2 cup fresh basil, chopped
Directions For Zoodles with Fresh Tomato Saute
Wash the Zucchini and spiralize.
Lightly salt the Zucchini and place it in a colander for at least 20 minutes so the liquid can drain from the Zucchini.
Pour the Zucchini from the colander and towel it off to wipe the excess moisture off of it.
Melt the butter in a large hot skillet, add the olive oil.
Saute the onions, peppers, and garlic, then add the salt, pepper, pepper flakes, oregano and basil.
Sitr and cook until the spices are completely blended with the saute.
Add the tomatoes and cook until the tomatoes begin to pop.
Add the Zucchini and lightly toss with the tomato mixture.
Add 1 cup water, cover the skillet and let cook on low for 8 minutes.
Garnish with fresh basil and parmesan sauce or parmesan cheese.
Enjoy!
