Tex Mex Breakfast Burrito
Tex Mex Breakfast Burrito is one of our families go to fast breakfast. A Breakfast Burrito is great for a busy family morning, early start on a road trip, or just because it's a great breakfast item. When I make this recipe, we always freeze part of the recipe or all of it, that way we always have a Burrito ready to go. Just a few seconds in the micro wave and it's ready to eat. This is one of our favorite grab and go breakfast and is packed with Tex Mex flavor.

Tex Mex Breakfast Burrito

Ingredients
1 pound regular sausage
1 yellow onion, chopped
1 cup red bell pepper, chopped
1 (10 ounce) can Tomatoes and Green Chilies, drained
8 eggs, beaten
1 teaspoon pepper
1/8 teaspoon cayenne
1 teaspoon chili powder
1 cup sharp cheddar cheese,shredded
1 cup Monterey Cheese, shredded
12- 10 inch flour tortilla's, warmed
For Freezing
Parchment Paper
Foil Paper
Freezer Bag
Directions
In a large skillet, brown the sausage.
Add the onion and bell pepper, saute until the onion is clear and the pepper soft.
Add the drained Tomatoes and Green Chilies.
Place the eggs into a mixing bowl and beat until completely blended.
Add pepper, cayenne pepper, and chili powder to the eggs.
Add the egg mixture to the sausage mixture.
Cook the mixture until the eggs are completely done.
In a micro wave safe container, warm the tortilla's.
Fill the tortillas with the sausage and egg mixture, add the mixed cheese on top.
Fold and roll the burrito.
For Freezing
Wrap the rolled burrito with parchment paper, then with foil.
Pack the burrito's in a freezer bag and freeze for up to 3 months.
To cook the frozen burrito, take the foil off, leaving the parchment paper and cook for 1-1/2 mintes.
Garnish with your favorite salsa.
