Old Fashioned Chicken Spread
Chicken Spread in our family is a real classic. I remember when my Mother attaching the hand grinder to the end of the cabinet and grinding up the left over chicken to make a delicious chicken spread. I still have that old grinder of hers but I sure am glad that I don't have to use it today, I have a much easier way of making it today along with a few of the ingredients that are different. Our family still enjoys this recipe as much today as they all did in the day of the food grinder.
A Delicious Chicken Spread
Old Fashioned Chicken Spread
Miz Helen's Kitchen
Ingredients
3 cups cooked chicken, chopped
1 (8 ounce) cream cheese
1/2 cup miracle whip or mayonnaise
2 tablespoons dill pickle juice
4 tablespoons sweet pickle relish
1 teaspoon parsley
4 tablespoons fresh dill weed
1/2 teaspoon poultry seasoning
1/2 teaspoon thyme
1 teaspoon salt
1 teaspoon pepper
Directions
In a food processor, place the chopped chicken, cream cheese miracle whip or mayonnaise, pickle juice, pickle relish, parsley, dill weed, poultry seasoning, thyme, salt and pepper. Process until completely smooth and spreadable.
Adjust your seasons according to your families taste and refrigerate.
Serve chilled and garnish with fresh dill weed.

The chicken spread sounds delicious, Miz Helen. My mom always used a grinder, too, and I used to, also, but I'm like you, and use my food processor now. I just made some ham salad last week with some leftover ham.
