Grilled Fruit Salad
We have some wonderful orchards near our cottage and we love the fresh fruits that they offer. There are so many ways that we can enjoy fruit and one of our favorite recipes is grilled. Grilling fruit brings out the natural flavors and sweetness of the fruit. For this Grilled Fruit Salad recipe I am using the grilled fruit in this wonderful salad. I am using the lettuce from our our home grown lettuce, that we grow in our lettuce tub. The dressing for this salad is delicious and can be used with any salad.

Grilled Fruit Salad

Ingredients
3 peaches, sliced in half
3 apricots, sliced in half
4 plums, sliced in half
2 tablespoons honey
Dressing
1/2 cup olive oil
1/4 cup apple cider vinegar
2 tablespoons lemon juice
1 tablespoon harvest course ground mustard
4 tablespoon honey
2 teaspoons sugar
2 teaspoons, herbs of your choice (I used fresh dill)
1 teaspoon salt
1/8 teaspoon cayenne pepper
Enough Salad Greens for your salad plate
1 to 2 cups Feta Cheese, crumbled
Directions
Wash and dry all the fruit, then cut it in half.
With the cup side of the fruit facing up lay it out on a baking sheet.
Drizzle the fruit with the 2 tablespoons honey.
Grill the fruit starting with the cup side down.
Grill 1-1/2 to 2 minutes on each side.
Remove the fruit to the baking sheet and let cool.
While the fruit is resting put the dressing together.
In a jar with a lid, pour in the olive oil, apple cider vinegar, lemon juice, mustard, honey, sugar, herbs, salt and cayenne. Place the lid on the jar and shake until the mixture is creamy. Taste and adjust your seasons to your taste.
Place the fresh salad greens in a large bowl and drizzle some of the dressing over the greens and toss to cover the leaves.
Arrange the fruit on a plate or platter covered with fresh salad greens.
Drizzle the dressing over the fruit.
Sprinkle the Feta Cheese over the salad.
Serve cold.
