Maple Pork Loin Roast With Apples and Vegetables
I like to have a very special one pot meal that we can enjoy as a family and when we have guest. This recipe for Maple Pork Loin Roast has a fabulous flavor and the apples and vegetables just complete the maple flavor. I made a gravy from the cooking liquid that is almost like a creamy dessert, just delicious. We loved the recipe and I sure hope that you and your family will enjoy it!

Maple Pork Loin Roast With Apples and Vegetables

Ingredients
3 1/3 to 4 pound Pork Loin Roast
1 1/2 pounds small red potatoes, skin on and halfed
2 small onions, peeled and quartered
2 medium Gala apples, skin on and quartered
1 teaspoon salt
1 teaspoon pepper
3 tablespoons olive oil
2 tablespoons dried thyme
1 cup apple juice
1/4 cup maple syrup
Directions
Wash the roast and dry it with a paper towel.
Salt and pepper the roast on all sides, then sprinkle the thyme over the entire
roast.
In a heavy dutch oven, heat the olive oil.
Place the seasoned roast into the hot olive oil and sear the roast on all sides.
Remove from the heat..
Place the red potatoes, onions, and Gala apples around the roast.
Pour the apple juice around the outside of the roast and vegetables.
Drizzle the maple syrup on the top of the roast and apples.
Cover and bake at 350 degrees for 1 1/2 hour.

Gravy
Ingredients
2 tablespoons butter
6 tablespoons flour
1 cup milk
2 to 3 cups liquid from the roast
Directions
Whisk together the flour and milk until the flour is dissolved.
After removing the roast, apples and vegetables from the dutch oven.
With the heat on medium, add the butter, and when the butter is melted add the flour and milk mixture. Stirring constantly until the mixture starts to thicken.
If it is to thin, add more flour.
If it is to thick add more milk.
Salt and Pepper to taste.
Serve hot over the roast.
