Parmesan Crusted Potatoes With Sour Cream Sauce
One of our favorite sides for a grilled steak is a great baked potato piled high with sour cream, cheese and chopped green onions. I decided to create a whole new potato side and this one is delicious. The potatoes are covered in a cheesy crust that has just the right seasons. They are crusty on the outside and soft and full of flavor on the inside. Then we are topping it with a kicked up Sour Cream Sauce. We love this new potato side and will be serving it many times in the future.

Parmesan Crusted Potatoes With Sour Cream Sauce

Ingredients
8 to 10 medium Red Potatoes, sliced in half
6 tablespoons olive oil
3/4 cup Parmesan Cheese, grated
1/2 teaspoon dried oregano
1/2 teaspoon dried sweet basil
1/4 teaspoon garlic powder
1/2 teaspoon pepper
1/8 teaspoon cayenne pepper
Directions
Wash and dry the potatoes then slice them in half.
In a 9X13 glass baking dish, pour 4 of the tablespoons of the olive oil on the bottom of the baking dish, making sure it is covered well.
In a small mixing bowl mix together the Parmesan Cheese, oregano, sweet basil, garlic powder, black pepper and cayenne pepper.
Sprinkle the cheese mixture over the olive oil in the bottom of the dish. Do Not pat it down, just sprinkle it on.
Place the potatoes slice side down on top of the cheese mixture.
Sprinkle the remainder of the olive oil on top of the potatoes, with your fingers make sure the oil covers the top of the potatoes.
Bake un-covered at 400 degrees for 30 to 40 minutes, until the potatoes are tender.
Remove to a cooling rack and let set for 10 minutes before turning over to serve.
Sour Cream Sauce
Ingredients
1 1/2 cups sour cream
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon Tabasco Sauce
3/4 cup green onions, chopped fine
Directions
In a small mixing bowl mix all the ingredients until completely blended.
Refrigerate until ready to serve.
